Resto-mod, huh? We used to call these types of cars 'Retro-Tech' when I was editor of Street Machine mag in the late 1990s, but they're the same thing. If we're talking unlimited spend here, then I reckon a series of heritage-themed local Fords and Holdens would be timely as they are soon to be extinct. Cars that 'book-end' a particular model by combining the first and last. For example, all the running gear from the last Falcon XR6 transplanted into the first XK Falcon. Or the running gear from Holden's last SV6 Commodore transplanted into the first VB Commodore. The mind boggles!
